Blueberry Steak Salad Recipe
It's hot outside and you don't feel like cooking right? Here's a recipe with minimal prep time, it's easy to prepare, and it will taste great on these hot summer days.
Blueberry Steak Salad Recipe:
Ingredients:
For Salad:
- 8 oz of grass-fed Skirt Steak, thinly sliced
- 1 tablespoon of Coconut Oil
- 2 cups Arugula
- 3/4 cup Blueberries
- 2 cups Watercress or Mixed Greens
- 1 Avocado, chopped
For the Dressing:
- 2 tablespoons Olive Oil
- 1 tablespoon fresh squeezed Lemon Juice
- Pinch of Sea Salt
Directions:
- Heat coconut oil in a skillet over medium-high heat
- Add steak and saute to your liking
- Remove from heat and let cool
- Add steak and remaining salad ingredients to a large bowl
- In a small bowl, whisk the dressing ingredients together (Olive Oil, Lemon Juice, Sea Salt)
- Pour over salad, toss and serve immediately
