Easy Paleo Tacos
Taco night done right!
Simple, Quick and Healthy Paleo Tacos. You'll have dinner on the table in under 30 minutes!
Ingredients:
For the Meat
- 1 tablespoon coconut oil
- 1/2 chopped onion
- 1 pound grass-fed ground beef (95% lean)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Pepper to taste
For Taco Shells
- 6-8 large Romaine lettuce leaves
Toppings:
- 1/2 cup guacamole
- 1 red bell pepper, chopped
- 3/4 cup romaine lettuce, chopped
- 1/2 red onion, chopped
- Optional: a handful of sliced cherry tomatoes
Directions:
- In a medium skillet, heat oil over medium heat for about 1 minute
- Add the onion, basil, oregano, and pepper and sauté until lightly browned, about 2 minutes
- Add the ground beef and sauté 7-10 minutes or until cooked to your liking, stirring every few minutes
- While the beef is cooking, wash and chop toppings and lay out Romaine lettuce leaves on serving plates
- When the beef is cooked, add 1-2 tablespoons to each lettuce wrap and add the toppings
- Serve and Enjoy!
