Grilled Salmon Salad
Refreshing and healthy grilled salmon salad is a great summer dinner recipe.
Ingredients:
- 1/4 cup Olive Oil
- 1 tsp. minced Garlic
- 2 Avocados, cubed
- 1/4 cup chopped Cilantro
- 1/4 cup fresh Lime Juice
- 1 Tomato, diced
- 3 Salmon fillets
- 1 Red Onion, sliced into rings
- 1/4 cup extra virgin Olive Oil
- 1 head Romaine Lettuce (remove exterior and hard shell, chop remaining)
- Optional Ingredients: Kalamata Olives and Goat Cheese
Directions:
- In a bowl, combine olive oil, lime juice, garlic, and cilantro. Whisk together until well blended.
- Add avocado and tomatoes, stir and set aside
- Lightly coat salmon and onion rings with the remaining olive oil. Grill both until onions are browned and salmon is cooked through.
- Place romaine lettuce in a large bowl and add half the dressing. Top with salmon and onion rings
- Pour the remaining dressing over the top of the salmon and onions.
- Top with optional ingredients: kalamata olives and goat cheese
- Serve immediately and enjoy!
