Baked (or Grilled) Chicken with Lemon & Herbs Recipe
Eating healthy can taste good and be good for you. Here's a great combination of herbs and spices to make your next meal one you'll want to make again and again.
Ingredients:
- 2 organic chicken breasts
- 1/3 cup olive oil
- 3 garlic cloves
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons parsley
- 1/2 teaspoon fresh thyme
- 1/2 teaspoon oregano
- 1/4 teaspoon rosemary
- 3 tablespoons fresh lemon juice
Directions:
- Place chicken breasts between 2 sheets of plastic wrap, using a meat mallet pound out to an even 1/2 inch thickness
- Place the chicken in a large resealable plastic bag
- Add olive oil, spices, herbs, and massage to evenly coat the chicken.
- Seal the bag and marinate in the refrigerator for at least an hour, ideally four hours
- After the chicken has had time to marinate, preheat the oven to 365 degrees F (190C)
- Place the chicken on a baking sheet and bake in the oven for 25 minutes or until the chicken reaches 160 degrees F/ Or cook on your outdoor grill
- Transfer the chicken to a plate and let it rest for a few minutes. Slice and serve
