Baked (or Grilled) Chicken with Lemon & Herbs Recipe

Eating healthy can taste good and be good for you. Here's a great combination of herbs and spices to make your next meal one you'll want to make again and again. 

Ingredients: 

  • 2 organic chicken breasts 
  • 1/3 cup olive oil 
  • 3 garlic cloves 
  • 1/2 teaspoon salt 
  • 1/4 teaspoon black pepper 
  • 2 tablespoons parsley 
  • 1/2 teaspoon fresh thyme 
  • 1/2 teaspoon oregano 
  • 1/4 teaspoon rosemary 
  • 3 tablespoons fresh lemon juice 

Directions: 

  1. Place chicken breasts between 2 sheets of plastic wrap, using a meat mallet pound out to an even 1/2 inch thickness 
  2. Place the chicken in a large resealable plastic bag
  3. Add olive oil, spices, herbs, and massage to evenly coat the chicken. 
  4. Seal the bag and marinate in the refrigerator for at least an hour, ideally four hours
  5. After the chicken has had time to marinate, preheat the oven to 365 degrees F (190C)
  6. Place the chicken on a baking sheet and bake in the oven for 25 minutes or until the chicken reaches 160 degrees F/ Or cook on your outdoor grill 
  7. Transfer the chicken to a plate and let it rest for a few minutes. Slice and serve
