Pear and Toasted Walnut Salad
Try this light and refreshing recipe for a crisp pear and walnut salad.
Ingredients:
- 1 1/2 Tbsp. Shallots, minced
- 2 Tbsp. extra virgin Olive Oil
- 2 Tbsp. White Wine Vinegar
- 1/4 Tsp. Dijon Mustard
- 1/4 Tsp. freshly ground Black Pepper
- 6 cups of baby Arugula Leaves
- 2 Pears, thinly sliced
- 1/4 cup Toasted Walnuts. chopped
- 1 small Red Onion, sliced
Directions:
- For the dressing combine shallots, olive oil, white wine vinegar, dijon mustard, and black pepper in a large bowl and stir with a whisk.
- Add arugula, red onion, and pears to the bowl.
- Toss to coat with dressing.
- Place 1 1/2 cups of salad onto each plate.
- Sprinkle with 1 tbsp. walnuts.
- Serve and Enjoy!
