Pomegranate Pork Recipe

Try this recipe for Savory Pomegranate Pork:
Ingredients:
- 1/2 tsp. Cinnamon
- 1/2 tsp. Cumin
- 1 tsp. Paprika
- 2 tbsp. Olive Oil
- 2 Pork Tenderloins
- 1 cup Pomegranate Juice, unsweetened
- 1 1/2 cups Pomegranate Arils
- 2 tsp. Balsalmic Vinegar
Directions:
- Heat oven to 350 degrees F
- In a medium bowl, combine the dry spices
- Season the tenderloins with the mixture
- In a large skillet, heat olive oil over medium heat for 1-2 minutes (it should get hot but not smoky)
- Reduce heat, add pork and cook until browned all over
- Transfer tenderloins to a baking dish or sheet and bake for 20 minutes
- When baking is finished, remove and transfer to a cutting board, cover with foil and let the meat rest for 10 minutes
- In a medium skillet, over medium heat, add pomegranate juice and let it come to a boil for 2-3 minutes.
- Remove from heat
- Drizzle juice, balsamic oil, and pomegranate arils over top of the tenderloins before serving
Serve with roasted seasonal veggies. My favorite is Brussels sprouts and butternut squash.
