Turkey Burgers and Beet Chips
Replace greasy burgers and fries this summer with this healthy alternative. It will not disappoint your taste buds or your nutrition plan.
Turkey Burgers:
Ingredients:
- 1 lb. ground turkey burger
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon freshly ground pepper
- 1/2 teaspoon coriander
- 1 pinch of cayenne pepper
- 2 green onions, chopped
- 1 tomato, sliced
- 2 cups arugula
- 1 avocado
- 1 tablespoon coconut oil
Directions:
- Mix ground turkey, spices, and green onions in a bowl and combine until well mixed. Form into 3 patties.
- Heat coconut oil in a frying pan over medium-high heat.
- Place patties in the pan and cook for 5-6 minutes on each side.
- Place burgers over a bed of arugula, and top with tomato and avocado slices.
Beet Chips:
Ingredients:
- 2 medium-sized beets
- 1 tablespoon olive oil
- Sea salt to taste
Directions:
- Preheat oven to 425F
- Line a baking sheet with parchment paper
- Using a knife slice the beets into very thin slices
- In a bowl mix together beet rounds, olive oil, and salt
- Spread beets on a baking sheet, so they aren't touching. Place in oven and bake for 20-30 minutes or until crispy
- Serve and enjoy!
