Veggie Egg Scramble
This Veggie Egg Scramble is not only delicious, but it also balances your blood sugar to kickstart your day.

Asparagus and spinach are loaded with nutrients, fiber, antioxidants and, like other greens, are a great brain booster. Among many other benefits, mushrooms, garlic and onion are all known for their immune boosting effects.

Ingredients:
- 1 1⁄2 cups asparagus, chopped
- 1⁄4 cup chopped onion
- 2 cloves garlic, minced
- 1 cup chopped mushrooms
- 3 cups spinach
- 6 egg whites
- 2 Roma tomatoes, diced
- 2 tsp olive oil
- Ground pepper to taste
Directions:
Blanche asparagus – in a medium pan, bring water to a boil, add asparagus and boil for about 2 minutes. Remove immediately and place in a bowl of cold water until cooled.
In a large skillet over medium heat, sauté in olive oil the onion, garlic, and mushrooms until tender. Add spinach and asparagus. Cook until spinach is wilted (3-5 minutes). Add and stir in egg whites and tomatoes. Scramble and cook for about 3-5 minutes. Add ground pepper to taste.
