Walnut Crusted Salmon
A crunchy walnut crust around a flaky salmon fillet is a delicious way to incorporate healthy fats and protein into your dinner menu.
Ingredients:
- 1 lb. Salmon Fillets
- 1 cup crushed/ ground Walnuts
- 1/2 tsp. ground Cumin
- 1/2 tsp. ground Coriander
- 1 Lemon, juiced
- 1 tsp. Coconut Oil
- Ground Peper to taste
Directions:
- Heat oven to 350 degrees F
- Drizzle lemon juice over salmon fillets and season with ground pepper
- In a medium bowl, combine crushed walnuts, coriander, and cumin.
- Dip fillets into the mixture and evenly coat both sides
- Lightly grease the broiler pan with coconut oil
- Place fillets on pan and bake for 12-15 minutes
